Aase's Danish Cinnamon Bread
5 - 5 1/2 cups flour
1/4 cup sugar
1 tsp salt
1 pkg dry active yeast
1 1/2 cups milk
1/2 cup margarine or butter
1/3 cup sugar
2 tsp ground cinnamon
1-2 tbsp melted butter
Mix 1 3/4 cups flour with 1/4 cup sugar and salt. Heat milk and 1/2 cup butter in saucepan to 110 degrees F. Combine dry and wet and beat 2 minutes. Add eggs and 1/2 cup flour and mix in well. Add another 2 - 2 3/4 cup flour and knead well until smooth. Can use KitchenAid mixer with kneading hook.
Heat oven to 90-100 degrees and turn off. Place dough in large greased bowl, flip over to grease top as well, cover with damp towel and let rise in off oven for about 45 min. Don't rely on time, check rise to be about doubled.
Combine 1/3 cup sugar and 2 tsp cinnamon and set aside.
Punch dough down and divide in half. Roll each half to about 8"x12". Brush each lightly with melted butter then sprinkle with cinnamon sugar. Roll up and place each roll in greased 8 1/2" x 4" bread pans. Bake 30 min at 350 degrees F. Or less in convection bake.
Yield two loaves. Can vary shape and cut rolls into sections and place together as shown in photo.
